Cauliflower rice salad

This low-calorie, low carb salad is truly delish, easy to make and fits as a side dish to any meal.
I love making it for a bigger lunch, dinner or BBQ. The cauliflower is a great low-calorie substitute for the grains, like quinoa or bulgur. Without any compromise of the taste.
Since it is summertime I felt like adding some fruit to it as well, to give it a little sweet pinch. Here i chose redcurrant but any berry will be suitable.
Ingredients for 1 small salad
salad:
200gr cauliflower rice,
if you don’t have cauliflower rice you can make it yourself by fine chopping cauliflower in a food processor.
A bundle chive
A bundle parsley
A handful fresh basil
A handful fresh mint
1 scallion
Dressing:
1 tbs olive oil
1 tbs white wine vinegar
1 tbs pomegranate juice concentrate
1 tsp honey
Salt & pepper to taste
Toppings:
A handful Roasted almonds
A handful redcurrant

Method
Finely chop all the fresh herbs and mix in a bowl with the cauliflower rice.
In a separate bowl combine all dressing ingredients, mix and add to the salad. Add the toppings (optional). Toss gently to combine. And enjoy.
I recommend to make the salad a few hours in advance, allowing the cauliflower to absorb the juices of the dressing.
