Cheese Burekas Roll - a 5 minutes prep meal

It has been almost 3 weeks to quarantine life and the food situation is a hot mess. You know I enjoy cooking, but having all my guys here all day, can be challenging, especially when it seems like all they do is eat.  Some days feel like I am quarantined to the kitchen LOL. My 4 men little and big have an appetite for days …

So, since I am not in the mood of spending my entire day in the kitchen. Sometimes it is all about making something quick, that takes no more than 5 min of work. Something that you know they are all going to eat without complaints (so no extra food needed). All my kids love it, my husband loves it, and I love it because they love it, haha.

That is why this burekas roll is the perfect life saver. All you need are just 5 basic ingredients, about 5min of your time and you are good to go (maybe another 5min if you wish to add a cut salad and boiled eggs on the side). All you need I a roll of puff pastry, eggs, plain yogurt or any cream cheese, grated yellow cheese and feta cheese. That’s it.

This recipe is my quick take on the normal cheese burekas, but instead of making a bunch of small ones (which takes longer), all you need to do is a big one. Because it is so simple I love making it also for our weekend brunch table, you have probably spotted it there quite a bit.

Ingredients for 1 roll

1 roll of puff pastry, the one I use is 40cm/24cm

250 gr / 9 oz plain Greek yogurt or cream cheese, I used no fat Greek yogurt

125 gr / 5 oz grated yellow cheese

100 gr / 4 oz crumbled feta cheese

1 egg

Sesame seeds for sprinkling (optional)

Salt and black pepper to taste

(I add about ¼ tsp salt because the feta is pretty salty already)

Method

Preheat the oven according to the instructions of your puff pastry, I heat at 200 degrees Celsius / 400 Fahrenheit.

In a bowl mix together Greek yogurt, yellow cheese, and feta cheese, season with salt and pepper.

Line a baking tray with baking paper. Place the puff pastry on the baking paper. Divide the pastry into 3 imaginal parts (along the long side). On one of the sides create diagonal cuts from the middle part to the outside, then mirror them to the other side. Pour the cheese mixture on the middle part. Fold the sides over the mixture creating a criss cross pattern. You must work quick with this pastry as it gets harder to work with the longer it stays outside the fridge. If needed place a few minutes in the fridge, this will make it easier to work with the dough. Make sure the edges are closed tight.

In a small bowl break an egg and mix. Brush the roll gently with the egg mix and sprinkle with sesame seeds.

Bake according to instructions of the puff pastry until golden brown. I bake for 25 min at 200 degrees Celsius.


 Enjoy it hot.

I love serving it with a small chopped salad and a boiled egg (which I make while baking).
