Roasted Cauliflower Bites

I love cauliflower! To be completely honest, I hated it as a kid, but today I’m obsessed. Actually, I’m obsessed with all the roasted veggies, but that’s another story.
So back to the cauliflower…
Cauliflower has many benefits. It is naturally high in fiber and B-vitamins. It provides antioxidants and phytonutrients that can protect against cancer, and it is low in calories (25kcal per 100gr raw), so it is a great volume food option during weight loss.
There are endless versions of roasted cauliflower. This one is easy, quick and uses basic seasoning. It can be served as a side dish at lunch or dinner, or just a snack.
In this version the cauliflower head is cut into small florets, which shortens the roasting time and gives it a perfect snack size. There is no precooking needed, all you must do is simply toss all ingredients together in a baking dish and roast in the oven.
You can enjoy it warm or cold, so it can be prepped in advance and stored in the fridge in a sealed container. the only thing is it will lose its crispness.

When I have guests over, I like to make the whole version, but as a quick everyday go to side or snack this version is simply perfect. Plus, because of its small sized bites it can be used as a perfect add-in to your salad or bowl, or just as a healthy snack to dip in your favorite dip.
Ingredients
1 cauliflower head- cleaned and cut into small even in size florets
1 tbsp olive oil
3 fresh thyme branches – leaves only or dry, about 1 tsp
1 tsp kosher salt
Pepper to taste
Method
Preheat the oven to 220C or 425F.
Prepare a backing dish lined with parchment paper. Place all ingredients in the dish and toss together until coated evenly.
Place the dish in the oven and roast for 25- 30 min until the cauliflower is tender and the tips are slightly charred. The bigger the florets the longer it will take so be sure to check on it.
Enjoy plain as a side or with some tahini or yogurt dressing.
